My grandmother used to make this growing up during the summer months and it was always fork tender and filling. Just 3 simple ingredients from the pantry.

Directions
1. Preheat the oven to 375°F and lightly grease a glass baking dish.

2. Spread a layer of sliced potatoes in the bottom of the dish, then add a layer of sliced onion and a layer of corned beef broken into shreds. Repeat the layers until all the ingredients are used, finishing with potatoes on top.

3. Cover the dish tightly with foil and bake for 1 hour.
